Kochi Prefecture has abundant fisheries and agricultural land for the cultivation of vegetables and grain, so we believe that industrical solutions for agriculture and fisheries can enhance the economic status of Kochi. Our laboratory is developing an apparatus that uses only one unit to produce slurry-ice from a solution of salt with a concentration of less than 1.0 wt%, useful for maintaining fish freshness without freezing, which is valuable because Japanese consumers tend to favor unfrozen fish. We are also developing a freezing system for concentrating liquids; this system has a strong market with the makers of liquid foodstuffs who want to concentrate fruit juice (for example) with losing nutrients.
