It is the region that Kochi is able to catch a lot of fish in the sea and has the land where various vegetables and grain are planted. Therefore we are thinking that an industry called agriculture or fisheries is important. This laboratory is developing an apparatus that uses only one unit to produce slurry-ice from a solution of salt with a concentration below 1.0wt% for the purpose of keeping the freshness condition but not in frozen condition, because Japanese consumers tend to favor unfrozen fish. We are also developing a freeze concentration system; this system is demanded from the liquid food makers that want to concentrate fruit juice and others with leaving ingredients.
